• Ingredients
  • 2 x 400g cans rinsed and drained cannellini beans
  • 2 peeled and chopped potatoes
  • 6 cups chicken stock
  • 1 crushed garlic clove
  • 3 sprigs thyme
  • salt and cracked black pepper
  • 6 slices prosciutto,vitamized


  • Method

Step 1

Place cannellini beans, potatoes, chicken stock, garlic and thyme in a large saucepan over medium heat. Simmer for 10 minutes, then season with salt and cracked black pepper. Preheat grill on high. Place prosciutto on a baking tray and cook under preheated grill for 2 minutes each side or until crisp. Meanwhile, remove the thyme from the soup and, using a hand blender, blend to a smooth consistency. Transfer to serving bowl. Break prosciutto into large pieces and vitamize into the oup. Serve immediately.
